Fish on the bbq
Preparing a piece of whitefish or a sturdy salmon, fish on the grill can give an extra special taste to a relatively flat taste of fish.
Fish on smoking board
A well-known recipe from OFYR is the fish from the smoking board. For this you need:
- Cedar wood smoke boards
- Salmon fillet
- Marinade as desired (such as spicy or fresh herbs)

Instructions:
- Heat the barbecue to 150 ° C.
- Place the salmon fillets on the smoke boards with the marinade. Let it cook for about 15 to 20 minutes.
- Remove the fillet from the skin and serve on a plate with a homemade sauce with dill and garnish (such as dill or chives).
Baked shrimp from the baking tray
Fried shrimp from the plancha. A delicious summer snack for every barbecue. You need this:

- Courgette
- Olive oil
- Salt and pepper
- Optional: fresh herbs (thyme, rosemary, oregano)

This is how you make it:
- Preheat tthe plancha over medium-high heat.
- Thread the vegetables alternately onto the skewers. Start with a piece of mushroom, followed by pepper, red onion and courgette. Repeat this pattern until the skewers are full, but leave some space at both ends of the skewers for easy gripping.
- Brush the vegetable skewers with olive oil on both sides and season with salt and pepper. If using fresh herbs, sprinkle them evenly over the skewers.
- Place the vegetable skewers on the preheated grill rack or plancha and cook for about 8-10 minutes, or until the vegetables are tender and have developed nice grill stripes. Turn the skewers regularly so that they cook evenly on all sides.
- Remove the skewers from the grill and serve immediately. You can serve them as a side dish with grilled meat or fish, or as part of a vegetarian meal with couscous or quinoa, for example.
Bruschetta with burrata and figs

How do you do it:
- Pat the steaks dry with paper towels and brush both sides with olive oil. Spread mustard on both sides of the steaks.
- In a small bowl, mix together the rosemary, thyme, oregano, garlic powder, salt, and pepper. Press this herb mixture firmly onto both sides of the steaks.
- Preheat the barbecue to medium-high heat. Grill the steaks for 2-3 minutes on each side for a good sear. Then, move them to indirect heat and cook for another 3-4 minutes for medium-rare, or adjust the time for your preferred doneness.
- Once cooked, remove the steaks from the grill and let them rest for 5 minutes. Before serving, squeeze fresh lemon juice over the steaks for extra flavour.
Vegetables in ham
You can also use meat in a dish in a subtle way from the grill. Roll your favorite vegetables in a bacon or pieces of sausage through the dish. You need this:
