Achieving the optimal performance 

- efore the plancha performs optimally, it must be seasoned 8 to 10 times to achieve a natural non-stick coating. Before cooking, set aside an extra 30 minutes or so for this. 
- Preferably use kiln-dried hardwood such as oak or maple. Avoid softwood, plywood, chemically treated or painted wood. For best results, use 4 to 6 medium-sized, split logs that you let burn into a layer of coals. 
- Make sure the flames do not rise too high. An even layer of glowing coals ensures best results. 
- Clean the plancha properly. Wipe off grease and food residue while the plate is still hot. Rinse with hot water, dry well and rub with a thin layer of oil. Do not use soap or soak or dip the plate!
