Barbecue recipes for the plancha

Barbecuing is no longer just about large cuts of meat and burgers. A fire bowl, plancha or barbecue is just as suitable for preparing fish, vegetables and even pizza. In this blog, you will find inspiration for plancha recipes, from meat and fish to vegetarian dishes, all perfect for outdoor cooking.
Meat barbecue recipes
Barbecued spare ribs
Ingredients: spare ribs and a marinade made with sweet soy sauce, honey, mustard, lemon, garlic and herbs.
Method:

Prepare the marinade and leave the spare ribs to marinate for at least 3 hours.
- Cook the ribs over indirect heat at 180 °C for 1 to 1.5 hours.
- Finish them briefly over direct heat for a crisp crust.
Herb-crusted steak
Ingredients: steak, oil, herb seasoning, mustard and lemon.
Method:
- Brush the steaks with oil and mustard and coat them with the herb seasoning.
- Sear the steaks briefly over direct heat, then continue cooking them over indirect heat.
- Leave the meat to rest for 5 minutes and finish with a squeeze of lemon.
Smash burgers
Ingredients: ground beef, burger buns, cheddar cheese, burger sauce, toppings of your choice, salt and pepper.
Method:
- Shape the ground beef into loose balls, place them on the cooking plate and smash them completely flat. Toast the burger buns on the plate at the same time.
- Flip the burgers after two minutes and place a slice of cheddar on each one. Cook for one more minute.
- Remove the buns and burgers from the plancha and assemble them with sauce and toppings of your choice.

Fish barbecue recipes
Salmon on a cedar plank
Ingredients: cedar grilling planks, salmon fillet and a marinade of your choice.
Method:

Heat the barbecue or plancha to 150 °C.
- Place the marinated salmon on the cedar plank and put it on the barbecue or plancha.
- Cook for 15 to 20 minutes, depending on your preferred doneness.
- Serve with dill sauce and fresh herbs.
Plancha prawns
Ingredients: prawns, garlic, lemon, parsley, paprika, olive oil, salt and pepper.
Method:
- Mix the prawns with garlic, lemon, paprika, olive oil, salt and pepper. Leave them to marinate for 5 to 10 minutes.
- Cook on the hot plancha for around 1.5 minutes on each side, until pink and cooked through.
- Serve with fresh parsley and extra lemon.
Plancha mussels with herbs and lemon
Ingredients: mussels, lemon, garlic, shallot, parsley, coriander, basil, olive oil, salt and pepper.
Method:
- Heat olive oil in a pan on the plancha or on the grill over medium heat.
- Add the chopped garlic and shallot and cook for around 2 minutes, until soft and fragrant.
- Add the mussels and toss them through the mixture. Place lemon slices on top and season with salt and pepper.
- Cover the pan and steam for 5 to 7 minutes, until all the shells have opened.
- Remove the pan from the heat and add the finely chopped parsley, coriander and basil.
- Serve immediately with fresh crusty bread for dipping into the sauce.
Vegetarian barbecue recipes
Grilled vegetable skewers
Ingredients: mushrooms, bell pepper, red onion, courgette, olive oil and herbs.
Method:
- Thread the vegetables onto skewers.
- Brush them with olive oil and season with herbs.
- Grill for 8 to 10 minutes, turning regularly.
Bruschetta with burrata and figs
Ingredients: baguette or other bread, burrata, figs, basil and olive oil.
Method:
- Slice the bread and grill it briefly on the plancha.
- Cut the figs into quarters and cook them briefly on the plancha as well.
- Top the bread with burrata, pieces of fig and a basil leaf.
Vegetarian pizza
Ingredients: pizza base, homemade if preferred, tomato sauce, cheese and toppings of your choice.
Method:
- Preheat the pizza oven or pizza stone to 200–250 °C.
- Add your chosen ingredients to the pizza base and place it in the oven.
- Turn the pizza regularly for even cooking and a crisp base.
- Drizzle the baked pizza with a little olive oil.
